																												<li><span>90 ml tamatiepasta</span></li>
																												<li><span>2 x 410 g-blikke heel, geskilde tamatie</span></li>
																												<li><span>500 ml (2 k) rooiwyn</span></li>
																												<li><span>bouquet garni: ’n paar takkies pietersielie, tiemie, roosmaryn en 2 lourierblare met kombuistou vasgebind</span></li>

					<p>1 Volg Stap 1 en 2 van die <span style="color: #0000ff;"><a style="color: #0000ff;" href="https://www.rooirose.co.za/klassieke-ragu-a-la-bolognese/" target="_blank" rel="noopener">Klassieke ragù à la bolognese</a></span> maar laat die lewertjies weg.<br />
2 Gooi 15 ml (1 e) van die olie in dieselfde kastrol. Braai die skenkels alkant goudbruin en geur met sout en peper. Sit by die groente in die oondpan.<br />
3 Skink die helfte (250 ml) van die wyn by en skraap die boom van die pan skoon. Gooi dit by die groente en vleis in die oondpan.<br />
4 Voorverhit die oond tot 140 °C.<br />
5 Gooi die blikkies tamatie, res van die rooiwyn en bouquet garni by, bedek met foelie en prut stadig oor lae hitte vir 2-3 uur tot die vleis sag is en van die been afgetrek kan word.<br />
6 Lig die skenkels uit die kastrol en trek die vleis met 2 vurke van die been af. Skep die vleis terug in die sous en laat vir nog 30-60 min. prut.</p>
<p><strong>Dien so op:</strong></p>
<p><strong>Skaapskenkel-ragù in reuse-skulpe </strong></p>
<p>Genoeg vir 4-6</p>
<p>Braai 1 ui en 5 ml gekapte knoffel in ’n klein kastrol, gooi 1 blik heel, geskilde tamaties by en druk met ’n vurk fyn.<br />
Gooi 125 ml hoenderaftreksel, 'n hand vol babatamaties en ’n paar basiliekruidblare by en kook vir 5-6 min.<br />
Kook 10-12 conchiglie-pastaskulpe vir 7-9 min. in kokende, gesoute water tot net sag. Dreineer en dompel in koue water. Meng die tamatiesous, 125 ml (halwe houer) crème fraîche en ’n hand vol babatamaties en gooi in ’n oondpan.<br />
Skep 30 ml (2-3 e) van die skaapskenkel-ragù in elke pastaskulp en pak op die tamatiesous.<br />
Bak vir 15-20 min. by 200 °C tot die sous prut.<br />
Skep 125 ml (res van die houer) crème fraîche en basiliepesto op elke skulp, strooi vars basilie oor en sit warm voor.</p>
