<p>Voorverhit die oond tot 180°C.<br />
1 Rooster die broodkrummels vir sowat 7 min. op ’n bakplaat tot goudkleurig.<br />
2 Doop die ravioli in die eier en laat die oortollige eier afdrup. Bedek met broodkrummels en braai tot 4 ravioli-koevertjies op ’n slag tot goudbruin.<br />
3 Skep uit en dreineer op kombuispapier.<br />
4 Smelt die botter oor lae hitte, laat dit af-kook tot dit begin karamelliseer. Jy sal ruik die botter kry ’n heerlike neuterige, karamelgeur.<br />
5 Voeg nou die salieblare by. Haal af sodra die botter goudbruin word.<br />
6 Sit voor met die warm ravioli.</p>

					<ol>
<li>Sit die aartappels in ’n groot kastrol met koue water en kook vir sowat 15 min. tot sag. Dreineer.</li>
<li>Maak die aartappels fyn tot sag en glad. Voeg die mascarponekaas en botter by. Geur met sout en swartpeper.</li>
<li>Verhit die botter intussen in ’n kastrolletjie oor lae hitte vir sowat 3 - 4 min. tot dit net begin verkleur. Laat verbruin, maar wees versigtig dat dit nie brand nie.</li>
<li>Skep die bruin botter oor die kapokaartappels en sit voor.</li>

																												<li><span>ekstra parmesaankrulle vir garnering</span></li>
																																									<li><span>Voorverhit die oond tot 180 ºC.</span></li>

					<ol>
<li>Rooster die botterskorsie vir ±40 min. tot sag op ’n bakplaat wat met bakpapier uitgevoer is.</li>
<li>Druk die skorsie fyn tot dit soos ’n puree lyk. Verhit die botterskorsie en 30 g botter vir ±8 min. in ’n middelslagkastrol oor lae hitte. Die mengsel moet dik en “droog” wees. Laat afkoel.</li>
<li>Sif die meel in ’n groot mengbak, voeg die botterskorsie en eiergeel by. Geur met sout, peper, neutmuskaat en parmesaan. Meng goed om ’n sagte deeg te vorm.</li>
<li>Verdeel die deeg in 4.  Rol elke stuk op ’n meelbestrooide werkvlak uit en vorm ’n worsie, sowat 1,5 cm dik. Sny elke worsie met ’n skerp mes in 2,5 cm-stukke. Hou in die yskas tot benodig.</li>
<li>Kook die gnocchi vir 2-3 min. in borrelende kookwater Kook vir nog ’n minuut sodra dit op die oppervlak dryf. Verwyder met ’n gaatjieslepel.</li>
<li> Verhit intussen die botter vir ±3-4 min. in ’n kastrolletjie oor lae hitte tot dit net begin verkleur. Voeg die salie en dennepitte by en kook vir nog 30 sek.</li>
<li>Verdeel die gnocchi tussen 4 bakkies en skep die botter oor die gnocchi. Sit met ’n skeppie crème fraîche en parmesaankrulle voor.</li>
