<li>2 e (30 ml) olyfolie</li>
<li>1 e (15 ml) botter</li>
<li>1 e (15 ml) fyngekapte vars gemmer en fyngekapte knoffel</li>
<li>4 grasuie, ruweg gekap</li>
<li>1 t (5 ml) gekapte brandrissies</li>
<li>¼ k ongesoute geroosterde kasjoeneute</li>
<li>500 g ontbeende hoenderdye (koop so by die supermark)</li>
<li>¼ k (60 ml) sjerrie</li>
<li>3 e (45 ml) sojasous</li>
<li>4 ontpitte dadels gesny</li>
<li>sap van een lemmetjie</li>
<li>2 hande vol fyngekapte vars koljanderblare</li>
</ul>
<p>&nbsp;</p>
<p><strong>Metode</strong></p>
<ol>
<li>Verhit die olie en botter in ’n groot pan oor matige hitte. Geur die hoender met sout en verbruin alkant tot goudkleurig. Skep uit en hou eenkant.</li>
<li>Braai die gemmer, knoffel, grasuie en brandrissie vir 2 min. of tot die knoffel goudkleurig is.</li>
<li>Voeg die kasjoeneute en hoender by en braai vir 5 min.</li>
<li>Voeg die sjerrie, sojasous, dadels en lemmetjiesap by en laat die mengsel vir sowat 7 min. prut tot die sous afgekook is en die hoender gaar is.</li>
<li>Roer die vars koljander by en laat afkoel voor jy die gereg in ’n digsluitende houer bêre.</li>
</ol>

<h4>Hoenderpasteitjies</h4>
<p>&nbsp;</p>
<p><em>Genoeg vir 10-12 klein pasteitjies.</em><br />
<em>Bêre vir 2-3 dae in ’n digsluitende houer in die yskas. Die deeg is gluten- en koolhidraatvry.</em></p>
<p>&nbsp;</p>
<p><strong>Deeg:</strong></p>
<ol>
<li>Meng 180 g (1½ k) gerasperde mozzarella en 45 g (3 e) roomkaas in ’n mikrogolfvaste bak.</li>
<li>Mikrogolf vir 2 min. op hoë krag, of tot die kaas gesmelt is.</li>
<li>Voeg 1 liggies geklitste eier by, gevolg deur 150 g (1½ k) amandelmeel en 2,5 ml sout en meng goed.</li>
<li>Keer die mengsel op ’n skoon werksvlak uit en knie liggies tot ’n deeg.</li>
<li>Druk die deeg plat, draai in kleefplastiek toe en laat rus vir sowat 10 min. in die yskas. Verhit die oond tot 180˚C.</li>
<li>Rol die deeg tussen 2 velle bakpapier uit tot sowat 2 mm dik.</li>
<li>Sny 12 groot sirkels met ’n deursnee van 6 cm en 12 kleiner sirkels met ’n deursnee van 4 cm uit en voer ’n muffinpan met 12 holtes uit.</li>
<li>Meng 250 ml (1 k) <strong>hoender</strong> (*sien resep onder) met 45 ml (3 e) crème fraîche.</li>
<li>Skep 2-3 e van die hoender in elke holte en bedek met die kleiner sirkels.</li>
<li>Seël die randjies en bak vir 20 min. of tot goudkleurig.</li>
</ol>
<p><em>Die hoender sal vir 2-3 dae in die yskas vars bly.</em></p>

<li>Sit die witsous terug op matige hitte en bring tot kookpunt, maar roer deurentyd. Verlaag die hitte en prut vir nog 1 min. Geur na smaak. Hou eenkant.</li>
<li>Pak die bestanddele in lae in ’n 30 cm x 20 cm- bak. Begin met die witsous (onder), gevolg deur die pasta, botterskorsie, spek en ertjies. Herhaal en eindig met die witsous en gerasperde kaas bo-op. Bak vir sowat 40 min.</li>

<p>• 100 g amandelmeel<br />
• 110 g goue vlassaad, fyngemaal<br />
• 30 g klappermeel<br />
• 15 ml (1 e) psylliumvesel<br />
• 30 ml (2 e) chia-saad, fyngemaal<br />
• 20 ml (4 t) garam masala<br />
• 10 ml (2 t) sout<br />
• gerasperde skil en sap van 1 suurlemoen<br />
• 250 ml (1 k) louwarm water<br />
• 15 ml (1 e) olyfolie</p>
<p>1 Meng die amandelmeel, vlassaad, klappermeel, psylliumvesel, chia-saad, garam masala, sout en suurlemoenskil in ’n mengbak.<br />
2 Knie die suurlemoensap en water by tot goed gemeng. Draai die deeg in kleefplastiek toe en laat vir 1 uur in die yskas rus.<br />
3 Verdeel die deeg in 6 stukke.<br />
4 Rol elke deel tussen 2 lae bakpapier in ’n 20 cm-sirkel uit.<br />
5 Verhit die olyfolie in ’n pan oor matige hitte.<br />
6 Braai die wraps daarin vir 1-2 min. aan elke kant, of tot lig goudkleurig. Moenie te lank braai nie, anders word dit krakerig.</p>

<h4>Bykomstighede</h4>
<p><strong>Murgpampoentjie-falafels</strong></p>
<p>1 Rasper 450 g murgpampoentjies fyn, sit in ’n vergiettes, strooi ’n bietjie sout oor en laat staan vir sowat 1 uur dat dit dreineer.<br />
2 Druk die oorblywende vloeistof in die pampoentjies met jou hand uit.<br />
3 Meng die murgpampoentjies met 1 eier, 10 ml (2 t) gekapte knoffel, 5 ml (1 t) gekapte rooi brandrissie, ’n hand vol fyngekapte kruisement, ’n hand vol fyngekapte pietersielie, 55 g amandelmeel, 30 ml (2 e) klappermeel, 80 g gekrummelde fetakaas en 5 ml (1 t) fyngemaalde komyn.<br />
4 Geur met sout en swartpeper.<br />
5 Verhit 45 ml (3 e) olyfolie in ’n pan.<br />
6 Vorm die mengsel in klein koekies en braai vir 5 min. aan elke kant, of tot goudkleurig.</p>
<p>&nbsp;</p>
<p><strong>Blomkool-hoemoes</strong></p>
<p>1 Voorverhit die oond tot 200 °C. Sit 1 groot blomkool, in blommetjies gesny, op ’n bakplaat en sprinkel 30 ml (2 e) olyfolie oor.<br />
2 Bedek met foelie en bak vir 10-12 min.<br />
3 Haal die foelie af en bak vir nog 10 min. tot goudkleurig.<br />
4 Verwerk die blomkool saam met 30 ml (2 e) tahini, 15 ml (1 e) suurlemoensap, 5 ml (1 t) heuning, 10 ml (2 t) gekapte knoffel, 5 ml (1 t) liggies geroosterde komyn en 60 ml (1/4 k) olyfolie in ’n voedselverwerker tot glad.<br />
5 Geur met sout en swartpeper.</p>
<p>&nbsp;</p>
<p><strong>Geroosterde hoender</strong></p>
<p>1 Voorverhit die oond tot 200 °C.<br />
2 Sit 1 groot hoender van sowat 1,2 kg in ’n oondpan.<br />
3 Geur die hoender in die maagholte en buitekant met sout en swartpeper.<br />
4 Vul die holte met 4 vars lourierblare, 3 roosmaryntakkies, ’n bossie tiemie, ’n kwart suurlemoen en ’n kwart lemoen.<br />
5 Smeer die hoender met 30 ml (2 e) olyfolie en rooster vir ’n uur en ’n kwart of tot gaar.</p>
<p>&nbsp;</p>
<p><strong>Krakerige wortel-beet-en-kool-slaai</strong></p>
<p>1 Sny 2 wortels, 1 klein komkommer, 2 bete, 1 klein perskool en 1 klein groenkool met ’n mandoliensnyer in dun repies (julienne).<br />
2 Gooi ’n hand vol kruisement en ’n hand vol vars, grof gekapte koljander by.<br />
3 Meng 60 ml (¼ k) appelasyn, 60 ml (¼ k) olyfolie, 15 ml (1 e) heuning en 2,5 ml (½ t) fyngemaalde komyn en geur met sout.<br />
4 Gooi oor die groente en meng deur.</p>

					<p>1 Sif al die droë bestanddele saam. Maak ’n holte in die middel.<br />
2 Gooi ’n derde van die melk in die holte en roer met ’n houtlepel in sirkeltjies tot die meel ingewerk is. Gooi die res van die melk by soos die mengsel verdik en roer tot glad.<br />
3 Meng die olie en lemoenskil by. Bedek met kleefplastiek en laat staan vir 30 min.<br />
4 Verhit olyfolie oor matige hitte in ’n 20- 25 cm-braaipan. Meng die beslag deur, gooi lepels vol van die beslag in die pan en draai die pan skuins sodat die mengsel oor die boom kan vloei.<br />
5 Bak vir 30-40 sek. tot die pannekoek bo-op begin borrel. Draai om en bak vir nog 30 sek. Herhaal met die res van die beslag.</p>

1 Smelt die suiker in ’n groot pan oor matige hitte tot goudbruin. Haal van die hitte af en roer die botter deur.<br />
2 Roer die appels en kaneel by die karamel, bedek en prut vir sowat 20 min. oor lae hitte tot die appels goudkleurig en gaar is.<br />
3 Sit die pannekoeke met die karamelappels voor.</p>
