<p>• 500 g repiesspek<br />
• 2 savoje-kooltjies<br />
• 150 g hoenderlewertjies, skoongemaak en in blokkies gesny<br />
• 150 g hoenderhartjies, skoongemaak en in blokkies gesny<br />
• 150 g hoendermagies (<em>gizzards</em>), skoongemaak en in blokkies gesny<br />
• 200 g varkmaalvleis<br />
• 200 g varkboudtjop, in blokkies gesny<br />
• 2 eiers<br />
• 4 takkies tiemie, gekap<br />
• hand vol pietersielie, gekap<br />
• gerasperde skil van 1 lemoen<br />
• 2,5 ml (½ t) sout en gemaalde swartpeper</p>
<p>1 Verhit die oond tot 160 °C.<br />
2 Voer ’n 22 cm x 11 cm-broodpannetjie met 250 g spekrepies uit (hou ’n paar repies eenkant vir opdiening).<br />
3 Sny die blare los van die kooltjies en kook vir 2 min. of tot sag in kookwater. Haal uit die water en dompel in yswater.<br />
4 Pak ’n lagie koolblare (net die helfte) op die spekrepies in die broodpan. 5 Meng die hoenderlewertjies, -niertjies en -magies, varkmaalvleis, varktjops, eiers, tiemie, pietersielie, lemoenskil, sout en swartpeper in ’n groot mengbak.<br />
6 Kap die oorblywende spek fyn en voeg by die hoendermengsel.<br />
7 Maak die broodpan halfvol met die hoendermengsel. Pak ’n lagie koolblare bo-op en vul met die oorblywende hoendermengsel. Sit die laaste spek bo-op.<br />
8 Bak vir 1 uur en 30 min. of totdat ’n toetspen skoon uitkom.<br />
9 Keer die terrien uit en sit skywe daarvan met slaaiblare, mosterd en piekels voor.</p>
