<p>Voorverhit die oond tot 200 °C.</p>
<p><strong>Deeg</strong></p>
<ol>
<li>Sit die meel in ’n groot mengbak.</li>
<li>Vryf die botter met jou vingerpunte in die meel in tot die mengsel soos broodkrummels lyk.</li>
<li>Meng die aartappel by tot die deeg net bymekaarkom. Verdeel die deeg in 2 en draai elke stuk in kleefplastiek toe.</li>
<li>Sit vir minstens 2 uur in die yskas.</li>
</ol>

<p><strong>Vulsel</strong></p>
<ol>
<li>Sit die hoender in ’n oondpan en geur die holte met sout en peper.</li>
<li>Meng die speserye en olie en smeer oral oor die hoender.</li>
<li>Rooster die hoender vir 1 uur 20 min. tot gaar. Laat afkoel.</li>
<li>Trek die vleis met jou vingers van die been af.</li>
<li>Smelt die botter in ’n kastrol. Braai die ui, knoffel, gemmer en rissie daarin tot sag.</li>
<li>Gooi die kerriepasta by en braai vir nog 3 min.</li>
<li>Gooi die klapperroom, tamatie en grondboontjiebotter by en laat saam kook.</li>
<li>Draai die hitte laer en laat prut vir 30 min.</li>
<li>Roer die aangemaakte mielieblom by en laat prut vir nog 10 min.</li>
<li>Gooi die hoendervleis by en verhit. Laat afkoel.</li>
<li>Werk met een stuk deeg op ’n slag en rol elk op ’n skoon, meelbestrooide vlak uit tot 7 mm dik.</li>
<li>Voer ’n diep 21 cm x 26 cm pan met die een helfte uit.</li>
<li>Skep die hoendervulsel in en bedek met die res van die deeg.</li>
<li>Verf liggies met eier en bak vir 30-40 min. of tot goudbruin en gaar.</li>

<li>Meng 30 ml van die masalapoeier met die koekmeel, sout en swartpeper.</li>
<li>Rol die hoenderrepies in die meelmengsel en skud die ergste meel af.</li>
<li>Verhit die olyfolie in ’n pan en verbruin die hoender daarin, verwyder en hou eenkant.</li>
<li>Soteer die uie en die knoffel in dieselfde olie tot sag en deurskynend.</li>
<li>Voeg die tamaties en die res van die masala-poeier by die uiemengsel.</li>
<li>Voeg die hoender by en prut vir nog 15 min. of tot die hoender gaar is. Geur met sout en swartpeper.</li>
<li>Roer die jogurt en koljanderblare deur en sit met basmati rys voor.</li>

<li>Pak die bestanddele in lagies in ’n groot glas- of plastiekbak wat dig sluit.</li>
<li>Begin met van die repies ui. Pak dan van die vleisblokkies en perskestukkies op die uie en strooi van die kerrie, koljander, bruinsuiker en lourierblare bo-oor.</li>
<li>Herhaal die lae deur weer met uie te begin. Gooi die rooiwyn oor en marineer vir 3 uur of oornag. Draai die vleis een keer om.</li>
<li>Ryg die vleis om die beurt met perskestukkies op die sosatiestokkies. Geur na smaak. Braai oor bereide kole tot gaar.</li>

<li>Meng die koekmeel en kerriepoeier in ’n groot mengbak. Geur na smaak. Rol die hoender in die meel en skud goed af.</li>
<li>Verhit die helfte van die olie oor hoë hitte in ’n groot pan. Braai die hoender vir 3 min. aan elke kant daarin tot goudbruin. Haal uit en hou eenkant.</li>
<li>Verhit die res van die olie in dieselfde pan oor matige hitte. Soteer die uie en knoffel daarin tot sag en deursigtig.</li>
<li>Voeg die tamaties met die vloeistof by en druk fyn met ’n vurk. Geur na smaak.</li>
<li>Voeg die hoender by en prut vir 5 min. Verlaag die hitte en voeg die aftreksel en room by. Roer tot die sous deurwarm is.</li>
<li>Voeg die kruie net voor opdiening by.</li>
<li>Sit voor met basmatirys, koljanderblare, klapper en amandels.</li>

<h4><strong>Metode</strong></h4>

<ol>
<li>Voorverhit die oond tot 200 °C. Sit die hoender en piekeluitjies in ’n groot, diep oondpan.</li>
<li>Meng die 60 g botter en 30 ml heuning. Druk die heuningbotter versigtig onder die borsvel van die hoender in.</li>
<li>Geur die maagholte met sout en sit die heel knoffelhuisies, lourierblare, tiemie en lemoen daarin. Bind die beentjies van die hoender met kombuistou bymekaar. Smeer olyfolie oor die hoender en geur met sout en swartpeper.</li>
<li>Rooster vir 1 uur en 5 min.</li>
<li>Meng die botter, koljander, knoffel, gemmer, brandrissie, garam masala, heuning en sesamolie in ’n klein mengbakkie. Smeer die mengsel oor die hoender en rooster vir nog 20-25 min. of tot goudkleurig en gaar.</li>

<li>Meng 15 ml (1 e) kerriepoeier en 125 ml (½ k) koekmeel in ’n groot mengbak. Geur met sout.</li>
<li>Rol 500 g hoenderborsies, in repe gesny, in die meelmengsel en skud die oortollige meel af.</li>
<li>Verbruin die hoender in ’n pan in 30 ml (2 e) verhitte avokado-olie. Haal uit en hou eenkant.</li>
<li>Braai 1 fyn gekapte ui en 15 ml (1 e) fyn gekapte knoffel in dieselfde olie tot sag en deursigtig.</li>
<li>Gooi ’n 400 g-blik heel, geskilde tamaties, ruweg gekap, ’n 400 g-blik gedreineerde kekerertjies, 15 ml (1 e) kerriepoeier en die gebraaide hoender by die uiemengsel.</li>
<li>Prut vir 15 min. of tot die hoender gaar is. Geur na smaak.</li>
<li>Sit voor met dubbeldikjogurt, ’n hand vol vars gekapte koljander en bruinrys.</li>

<li>125 ml (½ k) beesaftreksel</li>
<li>sout en gemaalde swartpeper</li>

<h4><strong>Metode</strong></h4>
<p>&nbsp;</p>
<p>Voorverhit die oond tot 220 °C.</p>
<ol>
<li>Maak die bo-laag: Kook die patat, aartappel en botterskorsie in gesoute water tot sag. Dreineer en druk fyn met `n vurk.</li>
<li>Maak die vulsel: Sprinkel die neutmuskaat en kaneel by en roer die botter by. Hou eenkant.</li>
<li>Verhit die olie in ’n groot pan oor matige hitte en braai die uie, seldery, wortel en knoffel daarin tot sag.</li>
<li>Voeg die maalvleis by en braai tot gaar en bruin. Voeg die kerriemengsel, borrie en lourierblare by. Braai vir nog 1 min.</li>
<li>Gooi die aftreksel by en prut vir 15-20 min. Geur na smaak. Skep in oondvaste bakkies.</li>
<li>Skep die bo-laag op die maalvleis in die oondvaste bakkies. Bak vir 10 min. tot goudbruin.</li>

<p><strong>Die beslag</strong></p>

<ol>
<li>Gooi die meeste van die bier by die meel, speserye en sout terwyl jy deurentyd met ’n draadklitser meng.</li>
<li>Die beslag moet soos dik room lyk, anders moet jy nog ’n bietjie bier byvoeg.</li>
<li>Dis nie nodig om al die klonte uit te klop nie, dié bak lekker krakerig in die olie.</li>
<li>Verhit die olie in ’n middelslag-kastrol.</li>
<li>Braai ’n stukkie brood in die olie en as dit vinnig goudkleurig word, is die olie warm genoeg.</li>
<li>Doop die vis in die beslag, laat die meeste afdrup en braai twee-twee tot goudkleurig, draai eenkeer om.</li>
<li>Skep uit en dreineer op handdoekpapier.</li>
<li>Sit voor saam met oondgebakte aartappelskyfies.</li>
</ol>
<p>* Jy kan die speserye weglaat as jy ’n gewone beslag verkies.</p>

<li>1 ui, fyngekap</li>
<li> 2,5 ml (½ t) fyngekapte rooi brandrissie</li>
<li>5 ml (1 t) fyngekapte knoffel</li>
<li>10 ml (2 t) fyngerasperde gemmer</li>
<li>15 ml (1 e) garam masala</li>
<li>5 ml (1 t) borrie</li>
<li>gerasperde skil van 1 lemoen</li>
<li>375 ml (1½ k) jasmynrys</li>
<li>250 g borriepatat, geskil en in blokkies gesny</li>
<li>1 x 400 g-blikkie klapperroom</li>
<li>180 ml (¾ k) water</li>
<li>sout en swartpeper</li>
<li>hand vol vars koljander, fyngekap</li>
<li>granaatpitte vir bo-op (opsioneel)</li>

<h4><strong>Metode</strong></h4>

<ol>
<li>Voorverhit die oond tot 200 °C.</li>
<li>Verhit die botter in ’n dieperige oondvaste pan oor matige hitte. Braai die ui, brandrissie, knoffel en gemmer vir 5 min. daarin. Voeg die garam masala en borrie by, gevolg deur die lemoenskil, rys en patats. Roer tot goed saamgemeng.</li>
<li>Voeg die klapperroom en water by en bring tot kookpunt. Bedek die pan met foelie en bak in die oond vir 30-40 min. of tot die rys en patats gaar is.</li>
<li>Sit saam met vars koljander voor.</li>

					<p><strong>Begin met die marinade </strong></p>
<p>1 Meng die gemmer, knoffel, sout, brandrissiepoeier en suurlemoensap in ’n groot mengbak.</p>
<p>2 Gooi die hoenderstukke by en meng dit met jou hande deur die sous. Maak seker dit is deeglik bedek. Laat staan vir 10 min.</p>
<p><strong>Sous </strong></p>
<p>1 Verhit die olie in ’n middelslagkastrol en braai die ui, gemmer en knoffel daarin tot sag en goudkleurig. Voeg die kardemom, naeltjies, borrie, lourierblaar en brandrissiepoeier by en braai tot geurig. Voeg die tamaties en water by en prut saggies vir 45 min. Skep die kardemompeule en naeltjies uit. Verwerk die sous met ’n stokmenger tot glad.</p>
<p>2 Sit terug op ’n lae hitte en gooi die botter bietjie vir bietjie by terwyl jy deurentyd roer. Die sous sal verdik. Voeg die room by, roer deur en laat prut saggies vir nog 3-4 min.</p>
<p>3 Ryg die hoender op die sosatiestokke. Verhit ’n riffelpan oor hoë hitte en braai die hoender daarin vir 10 min. aan ’n kant, of tot gaar en goudkleurig. Sit die hoenderstukke met die sous en naanbrood voor.</p>

• 5 swartpeperkorrels<br />
• 7,5 ml (1½ t) sout<br />
• 2,5 ml (½ t) koljandersaad, fyn gemaal<br />
• 500 ml (2 k) water<br />
• 15 ml (3 t) kerriepoeier (medium/sterk)<br />
• 22,5 ml (1½ e) witwynasyn<br />
• 3 groot aartappels, geskil en in kwarte gesny</p>
<p>1 Sit die afval, lourier- en suurlemoenblaar en peperkorrels in ’n drukkoker.<br />
2 Meng al die ander bestanddele, behalwe die aartappels, en gooi oor die afval. Stoom vir 45 min.<br />
3 Voeg die aartappels by en stoom vir nog 15 min.<br />

					<p>1 Geur die varktjops of steaks met sout en sprinkel die brandrissiepoeier bo-oor. Vryf dit met jou vingers in.</p>
<p>2 Verhit die olie in ’n middelslagpan en braai die vleis daarin tot alkant goudkleurig. Haal uit en hou eenkant.</p>
<p>&nbsp;</p>
<p><strong>Masala </strong></p>
<p>1 Meng die brandrissiepoeier, borrie, gemmer, knoffel en tamaties in ’n middelslagbak.</p>
<p>2 Verhit die 30 ml olyfolie in dieselfde pan en braai die fenegriek vir 2 min. daarin. Wanneer die saadjies begin bruin word, kan die kerrieblare en uie bygevoeg word. Braai tot sag en goudkleurig. Voeg die tamatiemengsel by die uie in die pan. Laat prut vir 10 min.</p>
<p>3 Geur met sout en bruinsuiker. Sit die vleis terug in die sous en skep die sous oor die vleis sodat dit goed bedek is. Voeg die water by en roer deur.</p>
<p>4 Verlaag die hitte en laat prut saggies vir 1 uur. Draai die vleis gereeld om. Sit die kerrie met die brosgebraaide spesery-aartappels voor.</p>
