<li>Geur die meel na smaak, rol die vleis daarin en verbruin in die verhitte olie in die potjie.</li>
<li>Voeg die uie, seldery, wortels en knoffel by en verbruin. Geur na smaak.</li>
<li>Voeg die rooiwyn, tamaties, aftreksel, tiemieblare, orego en suurlemoenskil by. Bedek en prut vir sowat 2½ uur tot die vleis sag is.</li>
<li>Pak die groenboontjies bo-op, bedek en prut vir 15-30 min. tot die bone gaar is.</li>
<li>Gremolata: Meng die pietersielie, knoffel en suurlemoenskil, strooi oor die potjie net voor jy dit met romerige polenta voorsit.</li>

<p>Maak <a href="https://www.rooirose.co.za/basiese-risotto/" target="_blank" rel="noopener noreferrer">die basiese risotto-resep</a> halfgaar totdat die helfte van die vloeistof geabsorbeer is &#8211; sowat 10 min. &#8211; maar moet nog nie die botter en parmesaankaas deurroer nie.</p>
<p>30 ml (2 e) olyfolie<br />
4 lamskenkels<br />
sout en gemaalde swartpeper<br />
1 ui, gekap<br />
10 ml (2 e) gekapte knoffel<br />
15 ml (1 e) tamatiepuree<br />
500 ml passata, Italiaanse tamatiesous<br />
250 ml (1 k) hoenderaftreksel</p>
<p><strong>Bouquet garni</strong><br />
hand vol pietersielie<br />
hand vol tiemie<br />
2 lourierblare</p>
<p>1 Verhit die olie in ’n groot kastrol oor hoë hitte. Braai die skenkels bruin. Geur na smaak.<br />
2 Voeg die ui en knoffel by en braai tot bruin. Roer die 15 ml tamatiepuree deur.<br />
3 Gooi die tamatiepassata en aftreksel by. Bind die pietersielie, tiemie en lourierblare vas met kombuistou en voeg by die skenkels. Sit die deksel op, verlaag die temperatuur en laat die skenkels vir 1½ uur liggies prut. Roer kort-kort en draai die skenkels om sodat dit nie brand nie.<br />
4 Lig die skenkels versigtig met ’n groot lepel uit die tamatiesous en hou eenkant. Meng die halfgaar risotto deur die oorblywende sous en laat vir nog sowat 5 min. prut tot die risotto sag aan die buitekant met ’n effense byt aan die binnekant is.<br />
5 Sit die skenkels saam met die tamatie-risotto voor.</p>

<p>1 Verhit die oond tot 200 °C.<br />
2 Meng 375 ml (1 ½ k) gerasperde mozzarella en 45 ml (3 e) roomkaas in ’n mikrogolfbestande bak.<br />
3 Sit vir 2 min. op hoog in die mikrogolf tot die kase heeltemal gesmelt is.<br />
4 Haal uit en meng ’n liggies geklopte eier en 166 g (⅔ k) gemaalde amandels vinnig by (sit terug in die mikrogolf vir 30 sek. as dit te styf raak).<br />
5 Rol die “deeg” uit op ’n bakplaat en bak vir 6 min. tot liggoud en tot die rande krakerig begin word.<br />
6 Gooi ’n bietjie knoffelolie oor en sit met die tjops voor.</p>

					<p>1 Meng die jogurt en harissa en marineer die lamstjops vir minstens 30 min. daarin.<br />
2 <strong>Koeskoes:</strong> Sit die koeskoes, rooi bosbessies en gemengde speserye in ’n mengbak.<br />
3 Bring die rissies, appelkose, lemoen- en suurlemoensap en -skil, rooiwynasyn, kookwater, heuning en olie tot kookpunt in ’n klein kastrol. Gooi oor die koeskoes en bedek met kleefplastiek. Stoom vir 5 min.<br />
4 Krap die koeskoes met ’n vurk los en meng die neute, sprietuie, komkommer en kruie deur. Geur na smaak. Hou eenkant.<br />
5 Voorverhit die oond tot 200 °C.<br />
6 Verhit ’n riffelpan oor hoë hitte. Skraap die meeste marinade van die tjops af en braai tot goudbruin aan albei kante. Geur na smaak. Sit in ’n oondpan en bak vir 8 min. of tot gaar na smaak.<br />
7 Sit die tjops met die koeskoes voor.</p>

<p>• 1,2 kg lamskenkels<br />
• 15 ml tamatiepasta<br />
• sout en swartpeper<br />
• 1 ui, gekap<br />
• 2-3 knoffelhuisies, heel<br />
• 2 wortels, gekap<br />
• 2 selderystingels, gekap<br />
• 30 ml (2 e) olyfolie<br />
• 30 ml (2 e) Marokkaanse spesery-mengsel (by supermarkte)<br />
• 1 kaneelstokkie<br />
• 1 x 400 g- blik heel geskilde tamaties<br />
• 1 x 400 g-blik kekerertjies, gedreineer<br />
• hand vol vars koljander</p>
<p>&nbsp;</p>
<h3><strong>Metode</strong></h3>
<p>1 Verhit die oondrooster (hoë hitte). Pak die lamskenkels op ’n oondpan en smeer deeglik met die tamatiepasta. Pak die ui, wortels, prei, seldery en knoffel op ’n ander pan.<br />
2 Rooster vir 15-20 min. of tot die groente geskroei en die vleis en bene goudkleurig is.<br />
3 Sit die vleis, groente en olyfolie in ’n groot kastrol. Voeg die Marokkaanse speserye by en braai vir nog 2 min. Voeg die lamskenkels, tamaties, 2 liter water en kaneelstokkie by.<br />
4 Bring tot kookpunt, verlaag die hitte en prut vir 1½-2 uur of totdat die lam sag is.<br />
5 Lig die skenkels met ’n gaatjieslepel uit die kastrol. Trek die vleis van die been af en sit saam met die kekerertjies terug in die kastrol.<br />
6 Prut vir nog 10 min. en geur met sout en swartpeper. Sit met vars koljander voor.</p>

<p>• 30 g botter<br />
• 30 ml (2 e) olyfolie<br />
• 1 ui, fyn gekap<br />
• 3 knoffelhuisies, fyn gekap<br />
• 2 rooi brandrissies, fyn gekap<br />
• sout en gemaalde swartpeper<br />
• 900 g / 1 kg lamslewer, opgesny in dik skywe<br />
• 60 ml (¼ k) sjerrie (medium cream)<br />
• 250 ml (1 k) room<br />
• hand vol pietersielie, gekap</p>
<p>1 Verhit die botter en olyfolie oor ’n hoë hitte in ’n pan.<br />
2 Braai die ui, knoffel en brandrissies vir 2 min. daarin.<br />
3 Voeg die lewer by en geur met sout en swartpeper. Braai vir 3-5 min. of tot amper gaar.<br />
4 Voeg die sjerrie by en laat prut vir 1 min. Voeg die room by en laat prut vir nog 2-3 min. of totdat die room effens afgekook het.<br />
5 Trek van die hitte af en sit voor met vars pietersielie en Franse brood om deur die sous te trek.</p>

• 280 g (1 k) sout<br />
• 30 ml (2 e) heel koljandersaad, liggies gerooster<br />
• 2 kg heel skaaprib<br />
• 30 ml olyfolie</p>
<p>1 Vryf die gemengde, droë bestanddele in die skaaprib in.<br />
2 Sit die vleis in ’n plastiekskottel en hou oornag in die yskas.<br />
3 Hang die vleis vir ’n dag op ’n koel plek tot dit droog is.<br />
4 Sit die heel rib in ’n groot kastrol, bedek met water en laat vir 2 uur stadig kook tot die vleis sag is.<br />
5 Voorverhit die oond tot 200 °C.<br />
6 Smeer die ribbetjie met olyfolie en rooster vir 10-15 min. in ’n groot oondpan tot goudbruin.<br />
7 Haal uit en sny in stukkies.</p>

<li>Meng 60 ml (¼ k) van die jogurt met die sprietuie, garam masala, gemmer, knoffel en rissiepoeier. Meng die lam deur en marineer vir minstens 1 uur of oornag.</li>
<li>Druk die vleis op 8 bamboes- of sosatiestokkies en skraap die ergste sous af. Verhit ’n riffelpan oor matige tot hoë hitte en braai die sosaties vir 1-2 min. aan elke kant tot goudbruin en gaar. Geur na smaak.</li>
<li>Meng die res van die jogurt, kruisement en grasuie en sit met die lamsosaties voor.</li>
