<li>Sit die eiers versigtig in ’n kleinkastrol met kookwater en kook vir presies 2 min. Dreineer en bedek met koue water.</li>
<li>Dop af wanneer afgekoel. Hou eenkant.</li>
<li>Meng die pesto deur die warm baba-aartappels.</li>
<li>Pak die res van die slaai bestanddele op ’n bord. Voeg die aartappels by. Breek die eiers oor die slaai oop en sit met die slaaisous voor.</li>

Dié pampoentjies is rou of gaar ewe lekker, en trou maklik met ander geure soos kruisement en suurlemoen. Hulle is boonop baie laag in kalorieë en ryk aan vitamien A en kalium. Soek gerus op ’n groentemark na die goudgeel blomme van dié groente vir ’n tikkie sonskyn op jou bord.</p>

<h4>Murgpampoen-en-kwarteleier-nessie</h4>
<p>Genoeg vir 4</p>
<p>Rooster 30 ml (2 e) sonneblom-, 10 ml (2 t) sesam- en 5 ml (1 t) papawersaad liggies in ’n pan. Hou eenkant. Meng 60 ml (¼ k) olyfolie, 30 ml (2 e) appel- of witwynasyn, 10 ml (2 t) heuning, ’n hand vol gekapte kruisement en geur met sout en peper. Hou eenkant. Sny 4 groot murgpampoene met ’n tandjiesgroenteskiller in dun repies en gooi die vinaigrette oor. Vorm met die murgpampoenrepies ’n nessie om die rand van die bord. Kook 16 kwarteleiers vir 1½ min. in kokende water. Dreineer en gooi koue water oor. Dop die eiers af, pak op die nessie en strooi die saadmengsel oor. Sit met parmesaankrulle voor.</p>

<h4>Murgpampoen-en-fetatertjies</h4>
<p>Meng 4 murgpampoene, in dun skyfies gesny, 2 grof gekrummelde fetawiele, gerasperde skil van 2 suurlemoene en 15 ml (1 e) avokado- of olyfolie. Sny gekoopte blaardeeg in vierkante van 7 cm x 7cm en sit in ’n muffinholte. Verdeel die pampoenmengsel tussen die holtes en bak vir 15-20 min. by 200 °C tot die groente sag en die deeg goudbruin en gaar is. Sit met ’n hand vol roketblare voor.</p>

<h4>Murgpampoen met ’n geurige sous</h4>
<p>Sny dun murgpampoenlinte met ’n groenteskiller en verf elk met ’n bietjie avokado- of olyfolie. Braai die linte op ’n warm riffelpan tot sag aan albei kante. Roer 15 ml (1 e) gekapte kappertjiesaad, 30 ml (2 e) olyfolie, 5 ml (1 t) gekapte knoffel en ’n hand vol gekapte kruisement saam en geur met sout en peper. Pak die linte op ’n bord en skep lepeltjies vol van die sous bo-oor. Sit met skeppies crème frâiche voor.</p>

<p><strong>Koop só</strong><br />
Kies murgpampoene met gladde, blink skille, ’n ferm kop en stert en so min moontlik kneusmerkies op die skil. Koop blommetjies wat vroegoggend gepluk is en nog nie verlep is nie, en wanneer die blommetjies nog toe is, is daar ook minder goggatjies in.</p>
<p><strong>Bêre só</strong><br />
Bind die groente en blomme in ’n plastieksak toe en hou in die groentelaai van die yskas – so bly dit vir 2-3 dae vars.</p>
<p><strong>Maak só  </strong><br />
Spoel die grond onder lopende koue water af en druk met kombuispapier droog. Die blomme kan met jou vingerpunte oopgetrek word en liggies af- en uitgespoel word. Druk versigtig met kombuispapier droog.</p>
<p><strong>Gebruik só</strong><br />
Zucchini is heerlik rou in slaaie. Sny die pampoentjies met ’n groenteskiller in linte, of in spaghettistringe vir ’n mooi tekstuur. Rooster helftes in gegeurde olyfolie op ’n riffelpan, of rasper dit en gebruik in bredies, maalvleis of selfs gebak soos sjokolade-en-zucchini-koek.</p>

<li>Verhit die olie en botter oor matige hitte in ’n groot pan. Soteer die knoffel vir sowat 1 min. Voeg die zucchini-linte by en braai tot net sag. Geur na smaak.</li>
