<ul>
<li>700 g (3 c) cooked pumpkin, mashed</li>
<li>275 g (2 c) self-raising flour</li>
<li>2 eggs</li>
<li>5 ml (1 t) salt</li>
<li>15 ml (1 tbsp.) baking powder</li>
<li>oil for frying</li>
</ul>
<p>&nbsp;</p>
<p>1 Mix all the ingredients. The mixture should not be too stiff &#8211; add a little milk if it is too stiff.<br />
2 Heat a little oil in a pan and spoon a tablespoon full of the mixture into the oil. Cook for 1 to 2 minutes on each side or until golden.</p>
<p>&nbsp;</p>
<p><strong>Caramel sauce</strong></p>
<ul>
<li>15 ml (1 tbsp.) butter</li>
<li>375 ml (1½ c) sugar</li>
<li>200 ml milk</li>
</ul>
<p>&nbsp;</p>
<p>1 Melt the butter and sugar in a medium-sized pan over low heat until it begins to caramelize. Add the milk, stirring.<br />
2 Cook until everything is melted.<br />
3 Serve the fritters with caramel sauce.</p>
