<p>&nbsp;</p>
<p>1 Verminder die xylitol met 15 ml en laat die lemoenskil weg uit die amandelkoekieresep.<br />
2 Voeg die gerasperde skil van 1 suurlemoen, 60 ml (¼ k) gerasperde parmesaan en 10 ml (2 t) gemaalde swartpeper by.<br />
3 Bak soos gewoonlik.<br />
4 Sit voor met kaas, of pak in die kosblik.</p>
<p>&nbsp;</p>
<p>Voorverhit die oond tot 180 °C.<br />
1 Room die botter en xylitol saam tot lig en donsig.<br />
2 Gooi een eier op ’n slag by en meng baie goed ná elke byvoeging.<br />
3 Gooi die eiergeel by en meng goed. Klits tot lig en donsig.<br />
4 Gooi die amandel- en klappermeel en lemoenskil by en meng goed.<br />
5 Rol die deeg in ’n rol met deursnee van sowat 5 cm. Draai in kleefplastiek toe en sit vir minstens 30 min. in die yskas.<br />
6 Sny die deeg in 5 mm-skywe en sit op ’n bakplaat. Laat 2 cm oop tussen elke koekie vir die rysslag.<br />
7 Verf elke koekie met die eierwit en strooi amandelvlokkies oor.<br />
8 Bak vir 12-15 min. tot die koekies ligbruin en plomp is.<br />
9 Laat op ’n afkoelrak afkoel en verpak lugdig.</p>
