Dit is naas saffraan die duurste spesery omdat dit so ’n duur en arbeidsintensiewe proses is om die blomme te kweek en die saad te oes en te verwerk.</span></li>

																												<li><span>1 Smelt 100 g (1 blok) donkersjokolade in 1 liter (4 k) warm melk. Sny 1 vanieljepeul in die lengte oop en voeg saam met 2 steranys, 4 kardemom en 1 kaneelstok by die melk. Bring tot kookpunt.</span></li>

Die orgidee is in Mexiko ontdek en die Spanjaarde het dit Europa toe geneem. Hier het dit in die hande van die Franse beland (dank Vader) wat die plant na hul tropiese kolonies, Madagaskar, die Comore en Réunion gestuur het. Réunion het toe as Île de Bourbon bekend gestaan, vandaar die naam Bourbon-vanielje. Elke vanielje het ’n kenmerkende geur en karakter wat deur die terroir bepaal word.</p>

<h4>Blitsidee 1: Vanieljebotter oor geroosterde pere</h4>

<p>Verhit die oond tot 180 °C. Meng 60 ml (¼ k) botter met die saadjies van 2 vanieljepeule en 30 ml (2 e) strooisuiker. Sit 4 pere, middeldeur gesny, op ’n bakplaat en smeer van die vanieljebotter oor elk van die helftes. Sprinkel 30 ml (2 e) olyfolie oor en bak vir 25-30 min. tot sag. Skep die pere uit op ’n bord en strooi ’n hand vol marjoleinblaartjies oor. Sit met van die rosé-stroop voor.</p>

Bourbon-peule van Madagaskar word as die bestes ter wêreld bestempel. Koop peule wat sag en plomp is, en meegee wanneer jy hulle tussen jou vingers rol. As die peule droog is, kan jy nie die sade uitkrap nie. Lees die etikette deeglik wanneer jy vanielje in ander vorme koop. Kies eerder ekstrak as vanielje-essens/geursel.<br />
<strong>Bêre só </strong><br />
Bêre die peule in ’n lugdigte houer, of soos ons in die vrieskas, want dan droog hulle nie uit nie en hou baie langer. Vryf die peul tussen jou handpalms om te ontdooi.</p>
<p><strong>Maak só </strong><br />
Rol die peul ’n paar keer tussen jou vingers om die saadjies los te wikkel. Sny die peul met ’n skerp messie in die lengte oop en krap die sade met die lemkant van die mes in een beweging uit sodat die swart saadjies aan die mespunt klou.</p>
<p><strong>Gebruik só</strong><br />
Die heel peul kan ’n paar keer by melk, vla of room gegooi word om geur te gee. Spoel ná gebruik af, druk droog en bêre in ’n lugdigte houer, of in die suikerbottel om daar ook weer geur te gee. Sny die peul oop en krap die blinkswart saadjies in ’n suikerstroop of by gebak in.</p>

					<p>1 Verhit die olie in ’n kastrol oor matige hitte. Soteer die ui, knoffel en rissie daarin tot sag. Voeg die komyn en borrie by en braai vir nog 1 min.<br />
2 Voeg die lemmetjieblare, vanieljepeul en tamatie by. Prut vir 5 min.<br />
3 Voeg die soetrissie en vis by, bedek en prut vir 8 min. Draai die vis om en voeg die garnale by. Bedek en prut vir sowat 2 min. tot die garnale pienk en gaar is. Geur na smaak.<br />
4 Sit voor met koljanderblare en lemmetjiewiggies.</p>
