<ol>
<li>Braai 1 fyn gekapte ui in 30 ml (2 e) botter tot goudbruin. Gooi 30 ml (2 e) gekapte knoffel by en braai vir nog 3 min.</li>
<li>Voeg 125 ml (½ k) rooisoetrissiepesto, 20 ontpitte groen olywe, 2 ansjovisfilette, 30 ml (2 e) gerasperde suurlemoenskil, 5 ml (1 t) paprika, 12 slaaitamaties, geskil en gekap, by en prut vir 15 min. oor lae hitte.</li>
<li>Geur 6 x 200 g-porsies witvis met sout, gemaalde swartpeper en 20 ml avokado-olie. Hou eenkant.</li>
<li>Pak die vis in ’n oondvaste bak en gooi die sous oor. Bak vir 40 min. by 200 °C.</li>
<li>Haal uit die oond en laat rus vir 15 min. Sprinkel ’n hand vol vars pietersielie oor en sit met koeskoes voor.</li>

<li>Meng die gevlokte vis, mielies, appelkose, grondboontjies, grasuie, rooi-ui en vars koljander in ’n groot mengbak.</li>
<li>Meng die mayonnaise, jogurt, korrelmosterd, mosterdpoeier, knoffel, gemmer, heuning en suurlemoen in ’n bakkie.</li>
</ol>
<p>Jy kan dit vir 2 dae in die yskas in ’n digsluitende houer bêre.</p>
<p>&nbsp;</p>
<p><strong>Snoek-jaffels</strong></p>
<ol>
<li>Smeer 8 snye witbrood met 1 e (15 ml) botter.</li>
<li>Meng 1 k geurige snoekslaai (resep onder) met 3 e (45 ml) mosterdslaaisous (resep onder).</li>
<li>Smeer 3 e (45 ml) van die snoekmengsel op een sny brood, maak ’n holte in die snoekslaai.</li>
<li>Sit ’n saggekookte eier (vir 5-6 min. gekook en afgedop) in die middel van die snoekmengsel en plaas die ander sny brood bo-op, botterkant na buite.</li>
<li>Sny ’n rooi-ui in dik skywe, sit eers ’n skyf rooi-uie in die jaffelpan en sit dan die toebroodjie bo-op.</li>
<li>Braai oor matige hitte tot goudkleurig.</li>

<li>Meng 1½ k (375 ml) snoekslaai (*sien resep bo), 1 liggies geklitse eier, ½ fyngekapte jalapeno, 1 e (5 ml) garam masala, ½ t (2,5 ml) fyn komyn, ½ t (2,5 ml) fyn koljander en ¼ k (60 ml) mosterdslaaisous (*sien resep bo) en sap van 1 lemmetjie in ’n mengbak.</li>
<li>Vorm viskoekies met ’n deursnee van 5 cm en 1 cm dik met die mengsel.</li>
<li>Verhit 2 e (30 ml) olyfolie in ’n pan oor matige hitte.</li>
<li>Doop die koekies in geklitste eier (omtrent 2 eiers) en bedek met panko-broodkrummels, braai vir sowat 2 min. aan albei kante tot goudbruin.</li>
<li>Sit met soetrissiesous voor.</li>

<p><strong>Tartaarse sous:</strong></p>
<p>Meng 125 ml (½ k) goeie mayonnaise met 1 fyn gekapte knoffelhuisie, 1 fyn gekapte ansjovisfilet, 30 ml (2 e) gekapte jalapeño-rissie, 30 ml (2 e) gesnyde kappertjiesaad, ’n hand vol gekapte grasuie ’n hand vol gesnyde Italiaanse pietersielie en ½ rooi ui, gekap.</p>
<p>&nbsp;</p>
<p>Voorverhit die oond tot 200 °C.</p>
<ol>
<li>Sit die stokvisfilette op ’n bakplaat, sprinkel olyfolie oor en geur na smaak. Bak vir 20 min. tot gaar.</li>
<li>Krummel die brood en meng met die eier, soetrissiesous, mayonnaise, mosterd, sprietuie, suurlemoenskil en -sap en koljanderblare. Vlok die vis by en geur na smaak. Bedek jou hande goed met meel en rol in 8 ewe groot viskoekies.</li>
<li>Verhit 30 ml (2 e) olyfolie in ’n groot pan oor matige tot hoë hitte en braai die viskoekies vir 3 min. aan elke kant daarin tot goudbruin. Dreineer op kombuispapier.</li>
<li>Sit die viskoekies voor met die Tartaarse sous, gebakte tjips, baba-kruieblare en lemmetjiewiggies.</li>

<p>Voorverhit die oond tot 200 °C.</p>

<li> Vryf die groenkerriepasta oor die vis en geur met sout.</li>
<li>Sit die baksakkie in ’n oondpan, gooi die koeskoes daarin en sit die vis op die koeskoes. Voeg die sitroengras by.</li>
<li>Meng die sousbestanddele in ’n bakkie en gooi oor die vis en koeskoes.</li>
<li>Strooi die sesamsaad en neute en groente oor die vis.</li>
<li>Geur met sout en knoop die sakkie toe. Bak vir 15 min.</li>

<ol>
<li>Gooi die meeste van die bier by die meel, speserye en sout terwyl jy deurentyd met ’n draadklitser meng.</li>
<li>Die beslag moet soos dik room lyk, anders moet jy nog ’n bietjie bier byvoeg.</li>
<li>Dis nie nodig om al die klonte uit te klop nie, dié bak lekker krakerig in die olie.</li>
<li>Verhit die olie in ’n middelslag-kastrol.</li>
<li>Braai ’n stukkie brood in die olie en as dit vinnig goudkleurig word, is die olie warm genoeg.</li>
<li>Doop die vis in die beslag, laat die meeste afdrup en braai twee-twee tot goudkleurig, draai eenkeer om.</li>
<li>Skep uit en dreineer op handdoekpapier.</li>
<li>Sit voor saam met oondgebakte aartappelskyfies.</li>
</ol>

<li>500 g (sowat 6 klein) witvisfilette, sonder vel, in blokkies gesny</li>

<li>fyn gerasperde skil van 1 suurlemoen</li>
<li>15 ml (1 e) peperwortelroom (horseradish cream)</li>
<li>hand vol koljanderblare, gekap</li>
<li>hand vol dille, gekap</li>
<li>sout en gemaalde swartpeper</li>
<li>750 ml (3 k) fyn, vars broodkrummels</li>
<li>45 ml (3 e) botter</li>
<li>45 ml (3 e) olyfolie</li>

<p><strong>Knoffel-en-kappertjiesaad-mayonnaise</strong></p>
<p>&nbsp;</p>
<ul>
<li>250 ml (1 k) mayonnaise</li>
<li>15 ml (1 e) suurlemoensap</li>
<li>2 knoffelhuisies, gekneus</li>
<li>45 ml (3 e) kappertjiesade, gekap</li>
<li>piekels en suurlemoenwiggies vir die voorsitslag</li>
</ul>

<h4><strong>Metode</strong></h4>

<ol>
<li>Kook die aartappels tot sag. Dreineer en druk ruweg met ’n vurk fyn. Laat effens afkoel.</li>
<li>Meng die vis, broodkrummels, eiers, suurlemoenskil, peperwortelroom, koljander en dille deur. Geur na smaak.</li>
<li>Verdeel die mengsel in 6 balle. Rol elke balletjie in die fyn broodkrummels en druk plat.</li>
<li>Smelt van die botter en olie in ’n pan oor matige hitte en braai die viskoekie vir 3-4 min. aan elke kant tot goudbruin. Herhaal met die res.</li>

<li>Meng die mayonnaise, suurlemoensap, knoffel en kappertjies.</li>
