<ul>
<li><strong>Thai-grondboontjiesous:</strong> Meng ½ k (125 ml) grondboontjiebotter, ½ k (125 ml) klappermelk, ¼ k (60 ml) sojasous, 2 t (10 ml) fyngekapte knoffel, 2 t (10 ml) fyngekapte gemmer, 2 t (10 ml) fyngekapte brandrissie, 2 e (30 ml) heuning en die skil en sap van een lemmetjie saam in ’n mengbak. Geur met sout en swartpeper.</li>
<li>Klits 6 eiers saam in ’n mengbak.</li>
<li>Verhit ’n medium braaipan oor matige hitte en spuit goed met kleefwerende kossproei.</li>
<li>Voeg ¼ k (60 ml) van die eiermengsel in die pan, beweeg die pan in sirkelbewegings om te verseker dat die eiermengsel eweredig versprei en ’n wrap met ’n dikte van ongeveer 2 mm vorm. Braai vir 2 min., draai versigtig om en braai tot gaar (ongeveer 1 min.). Hou eenkant.</li>
<li>Smeer 2 e (30 ml) van die Thai-grondboontjiesous op ’n wrap, skep ½ k (125 ml) geurige hoender (<strong>kry die resep onder</strong>) bo-op en garneer met julliene-groente soos wortel en mange tout.</li>
</ul>
<h4>Geurige dadel-en-sjerrie-hoender</h4>
<p>Die hoender sal vir 2-3 dae in die yskas vars bly. Ideaal vir saam met die eier-wraps!</p>

<p>1 Verhit die olie en botter in ’n groot pan oor matige hitte. Geur die hoender met sout en verbruin alkant tot goudkleurig. Skep uit en hou eenkant.<br />
2 Braai die gemmer, knoffel, grasuie en brandrissie vir 2 min. of tot die knoffel goudkleurig is.<br />
3 Voeg die kasjoeneute en hoender by en braai vir 5 min.<br />
4 Voeg die sjerrie, sojasous, dadels en lemmetjiesap by en laat die mengsel vir sowat 7 min. prut tot die sous afgekook is en die hoender gaar is.<br />
5 Roer die vars koljander by en laat afkoel voor jy die gereg in ’n digsluitende houer bêre.</p>

<p><strong>Thai Peanut Butter Sauce</strong></p>
<p>Mix ½ cup (125 ml) peanut butter, ½ cup (125 ml) coconut milk, ¼ cup (60 ml) soy sauce, 2 tbsp. (10 ml) chopped garlic, 2 t (10 ml) chopped ginger, 2 t (10 ml) chopped chili, 2 tbsp. (30 ml) honey and the grated rind and juice of one lemon. Taste with salt and pepper.</p>
<p><strong>Wraps</strong></p>
<ul>
<li>Whisk 2 eggs in a mixing bowl.</li>
<li>Heat a medium frying pan over medium heat and spray thoroughly with non-stick spray.</li>
<li>Add ¼ cup (60 ml) of the egg mixture to the pan. Move the pan in circular movements to ensure that the egg mixture sprays evenly and that it forms a wrap of 2 mm. Fry for 2 min. Turn carefully and fry the other side for 1 min. Keep aside.</li>
<li>Spread 2 tbsp. (30 ml) Thai peanut butter sauce on a wrap. Spoon ½ c (125 ml) tasty chicken (recipe below) over and garnish with vegetables cut into julienne strips (carrot and mange tout).</li>

																												<li><span> 	¼ cup (60 ml) sherry</span></li>
																												<li><span> 	3 tbsp. (45 ml) soy sauce</span></li>
																												<li><span> 	4 pitted dates, chopped</span></li>
																												<li><span> 	Juice from one lime</span></li>
																												<li><span> 	2 Handfuls of finely chopped coriander leaves</span></li>
																		</ul>

					<h3 class="penci-recipe-title">Instructions</h3>
					<ol>
<li>Heat the oil and butter in a large pan over medium heat. Spice the chicken with salt and brown until golden. Keep aside.</li>
<li>Fry the ginger, garlic, spring onion, and chili for 2 min or until garlic is golden.</li>
<li>Add the cashew nuts and chicken and fry for 5 min.</li>
<li>Add the sherry, soy sauce, dates and lime juice and leave 7 minutes to simmer until boiled down and the chicken is done.</li>
<li>Add the coriander leaves and let cool before you store the mixture in an airtight container.</li>
</ol>

																												<li><span>15 ml suurlemoensap</span></li>
																												<li><span>15 ml sojasous</span></li>
																												<li><span>15 ml fyn gekapte brandrissie</span></li>
																												<li><span>5 ml vars, fyn gerasperde gemmer</span></li>

																												<li><span>300 g gaar roosterhoender, in stukke gevlok</span></li>

					<p>&nbsp;</p>
<p>1 Klits die eiers tot lig en donsig.<br />
2 Roer die room, gesmelte botter en vanielje by die eiers.<br />
3 Sif die klappermeel en bakpoeier saam in ’n groot mengbak.<br />
4 Voeg die eiermengsel by en meng tot glad. Hou eenkant vir 5 min.<br />
5 Verhit ’n 25 cm-braaipan en smelt ’n klontjie botter op ’n slag daarin. Skep sowat 60 ml (¼ k) van die beslag in die pan en braai tot goudbruin aan elke kant.<br />
6 Herhaal tot die beslag op is.<br />
7 Meng die sousbestanddele en hou eenkant.<br />
8 Verhit die olyfolie in ’n ander pan en roerbraai die groente vinnig daarin tot net gaar.<br />
9 Voeg die hoenderstukkies by en laat deurwarm word.<br />
10 Gooi ’n bietjie van die sous oor en sit die res met die pannekoeke voor.<br />
11 Skep lepels vol van die vulsel op die pannekoeke en vou toe.</p>
<p><strong><br />
</strong><strong>Variasie - Plaatkoekies</strong></p>
<p>1 Maak die basiese beslag soos langsaan beskryf, maar voeg 50 ml amandelmeel en 125 ml gladde, volvetroomkaas by die deeg.<br />
2 Meng goed en bak lepels vol in ’n warm pan wat met olie geverf is.<br />
3 Jy kan ook ’n hand vol bloubessies by die beslag gooi.</p>

<li>Meng 60 ml (4 e) van die olyfolie, 10 ml (2 t) knoffel, roosmaryn, ansjovis en 1 suurlemoen se skil. Marineer die tjops vir 30 min. daarin.</li>
<li>Meng 10 ml (2 t) knoffel en olyfolie en hou eenkant. Rooster die platbrode in ’n baie warm pan. Verf die een kant van die wrap met die knoffelolie, draai om en verf die ander kant. Sny in kwarte. Herhaal met al die brode.</li>
<li>Braai die tjops oor matige kole of in ’n pan tot gaar.</li>
<li>Maak die tzatziki: Meng die jogurt, 5 ml (1 t) knoffel, komkommer en kruisement.</li>
<li>Sit die tjops voor met die knoffelplatbrode, tzatziki en ’n Griekse slaai.</li>
