Makes 40 balls
- 125 ml (½ c) butter
- 125 ml (½ c) sugar
- 250 g (1 packet) dates, pitted and chopped
- 500 ml (2 c) Rice Krispies
- desiccated coconut to roll balls in
1 Melt the butter and sugar in the microwave. Stir regularly.
2 Stir in the dates and microwave for another 2 minutes until the mixture starts to boil. Beat with an electric mixer until the dates are fine.
3 Stir in enough Rice Krispies to form a stiff dough.
4 Roll heaped teaspoonfuls of dough into balls. Roll in coconut.
