Roasted sausages with spicy tomato

Serves: Serves 4 Nutrition facts: 200 calories 20 grams fat

Ingredients

12 small lamb sausages
6 cloves garlic, peeled and sliced
2 red onions, cut into wedges
salt and ground black pepper
olive or avocado oil to pour over
2 handfuls of cherry tomatoes on the stem
45 ml (3 tablespoons) balsamic vinegar
¼ ciabatta bread, torn into pieces
handful of basil leaves

Instructions

Heat the oven to 180 °C.

1 Add the sausages, garlic and onion to a deep roasting dish. Sprinkle with oil and grill for 15 minutes.
2 Add the tomatoes, vinegar and ciabatta pieces and roast for another 15 minutes until golden brown and crisp.
3 Sprinkle the basil over and toss.
