Pear cake with honey sauce

Ingredients

3 pears, cut into thin slices and pips removed
125 ml (½ c) honey
30 ml (2 tbsp) lemon juice
180 ml (¾ c) softened butter
160 ml (2/3 c) soft brown sugar

375 ml (1½ c) flour
3 ml (½ t) baking powder

1 ml (¼ t) ground cinnamon
1 ml (¼ t) ground nutmeg

Instructions

1 Preheat the oven to 160 ° C. Line a 23 cm round cake pan with baking paper and grease with butter.
2 Simmer the pears, honey and lemon juice for 5 minutes in a small saucepan. Drain but keep the syrup until later and let cool slightly.
3 Cream the butter and sugar together in a large bowl until light and fluffy. Add the eggs one by one and mix well.
4 Sift flour, baking powder, salt, cinnamon and nutmeg and mix with the butter mixture. Finally add the milk. Mix well.
5 Pour the mixture into the cake tin and place pear slices on top. Bake for 50 minutes or until a skewer comes out clean.
6 Heat the pear syrup slightly and pour over the cake when it comes out of the oven. Serve warm with scoops of cream.
