Anette’s recipe for old Tuscan tea cookies

Vintage Tuscan tea cookies

Ingredients

900 g flour
5 ml baking soda
15 ml baking powder
squeezed juice and zest of 1 lemon
450 g sugar
4 eggs, beaten
500 g ricotta cheese
230 g softened butter
Sift 10 ml ground cinnamon and 250g icing sugar together in a bowl

Instructions

Preheat the oven to 180 ° C.
Grease a large baking sheet with butter and set aside.
Sift the flour, baking soda and baking powder in a large mixing bowl.
Mix the lemon juice, sugar, eggs, ricotta and butter.
Mix the dry ingredients into a workable dough.
Pinch apricot size balls of the dough and roll into balls, pack 3 cm apart on the baking sheet and bake for 30 minutes until golden brown.
Remove and let cool slightly. Roll in the icing and cinnamon mixture.
